Lola Jean’s is giving St. Louis a sneak peek of its new pizza concept.
Russell Ping’s South City café and coffee shop announced in a press release that it will start offering take-and-bake pizzas on Thursday nights. The “grandma-style” pizza, a thick-crust square pizza similar to focaccia, is a glimpse into what Lola Jean’s might look like after the COVID-19 crisis.
Each pizza is served in a 1/4 sheet pan and feeds two to three people with eight square slices. Customers can pick up the Traditional with aged Provolone, San Marzano tomato sauce, oregano, Parmigiano Reggiano, basil and olive oil or the Bianca with smoked mozzarella, Bechamel sauce, oregano, Parmigiano Reggiano and breadcrumbs. You can also add Volpi pepperoni, housemade Italian sausage, black olives, pepperonicini, Wenneman smoked bacon or red onion to any pizza.
When Lola’s Jean’s opened in Southampton in 2018, the plan was to eventually evolve the coffee shop into a neighborhood restaurant serving pizza and simple Italian cuisine.
“We opened Lola Jean’s as a temporarily coffee shop until we had our pizza concept dialed in,” Ping said in the release. “The community response was so overwhelming that we just kept progressing our café experience for breakfast and lunch. We have plans to roll out dinner service this summer while maintaining the coffee shop and café during the day. Our timeline may change, but we think take-and-bake pizzas will be a great introduction to the future of Lola Jean’s.”
For each take-and-bake pizza solid, $1 will be donated to the Gateway Resilience Fund.
“We understand it’s a small gesture, but we wanted to do something. The sale of the pizzas will also allow us to keep our core staff employed during this difficult time,” Ping said.
Starting April 9, the pizzas will be able for pickup from 4 to 8pm on Thursdays. Orders can placed online Monday through Wednesday at 5pm for the Thursday pickup. Pizzas can be finished in the oven at home in about 20 minutes.
